Vegan French Toast w/ Maple Glazed Strawberries

Delicious orange-infused vegan french toast topped with maple-glazed roasted strawberries- A perfect dairy-free breakfast treat!

Ingredients
  

For The Vegan French Toast:

  • Bread I used a bloomer loaf
  • 4-5 Tbsp Rice Flour
  • 3/4 Cup Plant-based milk
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1 tbsp Maple Syrup
  • Coconut oil for the pan
  • 1/2 Orange zest
  • Orange extract optional if you want it more 'orangey'
  • 1 tbsp nutritional yeast optional

For the Strawberries:

  • 300 g Strawberries sliced
  • 2 tsp lemon juice
  • 3 tsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp orange extract optional
  • 1/2 orange zest

Instructions
 

  • Prepare the strawberries by de-stemming and chopping/slicing
  • Mix all the liquids in a bowl and toss with the strawberries
  • Cover a tray with baking paper and spread the strawberries in a single layer. 
  • Bake in the oven for 15-20 minutes at 180C. 
  • Meanwhile prepare the french toast ingredients by slicing your bread of choice and mixing the flour, milk, vanilla extract, maple syrup, cinnamon, nutritional yeast and orange zest in a wide bowl ( big enough for your bread slices to lay flat )
  • Stir thoroughly, making sure there are no clumps in the mixture.
  • Heat a little coconut oil in a large frying pan while you soak your first bit of bread in the 'egg' mixture. I tend to soak it for between 20-30 seconds one each side. 
  • Place in the pan at medium heat and fry on each side  till lightly golden brown and thoroughly cooked.
  • While one slice of bread is frying in the pan, get another one ready in the soaking mixture. Continue till all are cooked.*
  • Once they're all ready then pile up on the plate and top with the maple glazed strawberries, some optional extra maple syrup and maybe even some coconut whipped cream or yoghurt.

Notes

Note* I've found that this vegan mixture sticks to the pan a lot more than egg does. It also doesn't brown quite as much and can be a bit more 'moist'. Just make sure to put extra coconut oil in the pan, if needed.
* If you have a large enough pan, it's better to try fry two slices at the same time.
